Vegan Baked Stuffed Sweet Potatoes
Sometimes I just come up with a recipe on the spot, which is exactly what happened with this one! It was too good not to share, so here I am giving you all the secrets to the deliciousness of my vegan baked stuffed sweet potatoes!
This recipe takes only about as long as it takes to cook a sweet potato, in this case around 30 minutes! It is quick, easy, and cheap, and is perfect on nights where you want to be healthy in a hurry!
To make my vegan baked stuffed sweet potatoes, there are only 3 steps. Prep the veggies and beans, lay on a sheet and bake, then assemble! Easy as 1, 2, 3!
I threw some spices onto the potatoes and beans to give a little extra flavor, and I paired the finished dish with a side of hummus for dipping into! But feel free to use any dressing or sauce you desire :). Tahini would be great to use, or even a garlic lemon sauce or dressing! **I originally wanted to use homemade tahini, but my attempt at making it horribly failed… lol**

To start, I gathered my ingredients. For this recipe all I used was a sweet potato I had lying around, a tomato, a small jalapeno, and half a can of black beans. I only made this for myself, so if you are cooking for more, just multiply the ingredients by how many people you are serving!
To prep the food, I sliced the sweet potato lengthwise into thin cross sections (about 1/2 inch thick slices). I chopped up the jalapeno and tomato, and lastly rinsed the black beans in a strainer.
Once the ingredients were prepped (which took a total of about 5 minutes!), I laid everything out on a tinfoil lined baking sheet and set my oven at 400 degrees. I sprinkled a bit of cinnamon onto the sweet potatoes, and shook some cumin, paprika, turmeric, and black pepper into the black beans. I slid the tray into the oven, and baked everything for about 30 minutes (once the sweet potatoes were browning and soft.
After everything was done baking, all that was left to do was assemble the vegan baked stuffed sweet potatoes. I took a spoon and pushed down the middles of the sweet potato slices to make a little “boat” for the filling to sit in. I mixed together the tomatoes, jalapenos, and beans, and put that in the center of the potatoes. To finish them off, I sprinkled some parsley flakes and sesame seeds on top, and added a side of hummus for dipping!

Vegan Baked Stuffed Sweet Potatoes
Quick, easy, and cheap to make! These vegan baked stuffed sweet potatoes will have your tastebuds begging you for more!
- 1 medium sweet potato
- 1 medium red tomato
- 1 small jalapeno
- 1/2 can black beans
- black pepper
- parsley flakes
- sesame seeds
- 2 TBSP hummus of choice or dipping sauce
Set oven to 400 degrees fahrenheit.
Cut sweet potato lengthwise into four cross sectional pieces (see picture).
Dice tomato and jalapeno.
Rinse black beans with water.
Place sweet potatoes, tomato, jalapeno, and beans on a tinfoil lined baking sheet.
Sprinkle cinnamon on top of sweet potatoes. Sprinkle cumin, paprika, turmeric, and black pepper on top of black beans.
Place baking sheet in oven and bake for about 30 minutes, or until sweet potatoes are soft and begin to brown.
With a spoon, press down on the sweet potato's center to create a "boat" for the topping to sit in.
Fill middle of potatoes with the tomatoes, jalapenos, and black beans.
Top with parsley flakes and sesame seeds if desired.
Enjoy with a side of hummus, or dipping sauce of your choice!
