Chia what? Yes that’s right, you can make a healthy pudding from the well known super food, chia seeds. What’s even better, it is super easy and quick to do, requiring only 4 ingredients and about 2 minutes right before bed. So read on to find out how to make this vanilla chia pudding an easy addition to your morning or midday snack!
First, let’s talk about the benefits of chia seeds and why exactly they are considered to be a health super food. The first benefit is the fact that chia seeds are a nutrient dense food, meaning they are packed with a huge amount of nutrients for not a lot of calories. The nutrients they provide include calcium, potassium, omega 3s, manganese, and much more. They are also a great source of fiber. They help to lower cholesterol, decrease risk of heart disease, aid digestion, and reduce the risk of developing diabetes. As you can see, chia seeds are a small but mighty food that should be incorporated into everyone’s day.
However, there are some things you should be weary about…. You may not know this, but chia seeds can absorb up to 27 times their weight in water, and expanding while doing so. So, please, don’t eat a tablespoon of dry chia seeds and then drink a bunch of water… or you will die. No, seriously, some guy did this and died. I’m just trying to help ya out.
For my chia pudding I used organic chia seeds, silk almond milk, kite hill vanilla almond milk yogurt, and vanilla. Feel free to swap out brands or modify these ingredients to your liking, and let me know if you experiment!
I grabbed a small mixing bowl and added the chia seeds first…
Followed by almond milk…
Then the yogurt and vanilla…
And mixed until well combined. The mixture needs to be chilled for at least a few hours or you can let it sit overnight.
After the mixture sits, you should have a creamy pudding! It tastes great with fresh fruit, coconut flakes and you can top it with my granola as well!
Vanilla Chia Pudding
- 2 TBSP chia seeds
- 1/4 cup almond milk
- 1/4 cup vanilla yogurt (dairy free)
- 1 tsp vanilla
Combine ingredients in a small mixing bowl and mix until well combined.
Refrigerate for a few hours or overnight.
Enjoy your chia pudding with any toppings you would like!
