If you’re anything like me, you know the importance of having a great breakfast every morning. I love waking up and having my morning cup of coffee with a scrumptious hot breakfast that fills up my tummy for the day ahead. One of my favorite meals to have is a simple bagel with cream cheese. However, sometimes it is hard to find a good vegan cream cheese alternative that is healthy for you.
Recently, I concocted this cream cheese recipe that goes great with toast, bagels, chips, or really anything you can think of! The best part about this recipe aside from it tasting amazing is that it is completely raw! The base of the spread is made from raw cashews and avocado. The spices and lemon juice give it the savory flavor that will make your breakfast come to life.
Furthermore, this cream cheese is so easy to make! All you need is a blender or food processor and you are good to go. The longest part of the recipe is soaking the cashews in some water, but this can be done overnight and they will be ready for you in the morning!

The first step is to gather the ingredients. You will need soaked cashews, italian seasoning, minced garlic, avocado, and lemon juice. You’re probably wondering right now if that green thing pictured below is an avocado…. the answer is yes! It is a different type of avocado. I found it while at the grocery store, and thought I would give it a go in this recipe. This type of avocado has a smaller percentage of fat which I thought would be nice for this recipe in order to balance out the fats in the cashew nuts. Feel free to use any avocado you please though!
Place the cashews in the food processor first and blend.
Then, add the rest of the ingredients to the food processor and blend until smooth and creamy. You can add salt to taste.
I like to enjoy my raw cashew cream cheese on whole grain bagels topped with tomato! Let me know how you like to enjoy this spread! 🙂
Raw Cashew Cream Cheese
- 3/4 cup raw cashews
- 1 avocado
- 1/3 cup lemon juice
- 1 clove garlic minced
- 1/2 tsp italian seasoning
- salt to taste
Soak the cashews in water overnight.
Place cashews into food processor and process until broken up (about 2 minutes).
Place remaining ingredients into food processor and blend until smooth and creamy.
Enjoy this raw cashew cream cheese spread on bagels, pita, toast, with veggies, and much more!
