I have always been sceptical of overnight oats. I always thought they were too watery and I didn’t enjoy eating them cold. However, with this recipe the chia seeds take care of the liquidy part of the oats and the peanut butter gives it an amazing taste!
This recipe is super fast. You will literally throw everything into a bowl before you go to bed, and it will be waiting for you the next morning!
I paired my peanut butter and banana overnight oats with some almond vanilla yogurt, almonds as a topping, and I drizzled some melted peanut butter overtop of cut up bananas.

Peanut Butter & Banana Overnight Oats
- 3/4 cup rolled oats
- 2 TBSP chia seeds
- 2 TBSP powdered peanut butter
- 1 1/4 cup almond milk
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1 banana
- almonds for topping
- melted peanut butter for drizzling
Combine oats, chia seeds, powdered peanut butter, almond milk, vanilla, and cinnamon in a bowl.
Store overnight to let thicken.
Prepare the next morning by topping with banana, almonds, and drizzle with melted peanut butter!
